Capsicum & Mushroom Medley

A simple no fuss veganastic meal!

Preparation: 10 mins Cooking time: 15 mins Total: 25 mins Serves: 2-3 people


Oyster mushrooms and bell peppers with onions.

This dish is one that my mother and I prepare often. We love how quick and simple it is. This dish is so versatile and can be eaten as a sandwich, with rice, a salad or placed in a wrap. I usually like to enjoy this on days when I am too lazy too cook but still want a home cooked meal.



Ingredients:


  • 1 large onion

  • 500g button mushrooms (white or brown) or oyster mushrooms

  • 1 large green capsicum

  • Salt to taste

  • Pepper to taste

  • 1 tbsp of vegetable oil or water (use any vegan friendly oil that you prefer)


Instructions:


1. Juillian all the vegetables.

2. Heat a pan and add 1 tbsp of oil or water.

3. Add onions and sauté for 5 minutes or until translucent.

4. Add capsicums and mushroom.

5. Sauté for another 5 to 7 minutes.

6. Sprinkle salt and pepper.

7. Cook for another 2 minutes.

8. Serve hot or warm.
