Carob Coffee Oat Pancakes

A great way to start the morning!
Preparation: 5 mins Cooking Time: 15 mins Total: 20 mins Serves: 2 people

I love oats and I try to have them every day. I love how oats keep me full for longer. Here is my oat pancake recipe. There are so many ways to vary this so have fun experimenting and making your very own version of oat pancakes. Here is how I like to make mine. Enjoy!
Ingredients:
1/2 cup instant oats
1/2 soy milk/ almond milk
1 teaspoon instant coffee
1 tablespoon carob (you can use chocolate powder)
1 teaspoon vanilla essence
1 teaspoon cinnamon powder
1/2 tablespoon sugar (add more if you like them sweeter)
pinch of salt
sprinkle of chia seeds
sprinkle of flax seeds
sprinkle of pumpkin seeds
coconut oil/ vegan butter for the pan
Instructions:
1. Combine all the dry ingredients in a bowl. Mix well.
2. Add soy/ almond milk and vanilla essence.
3. Mix till incorporated.
4. Heat pan.
5. Add a bit of coconut oil/ vegan butter to the pan.
6. Once the oil has heated, spoon a small portion of batter onto the pan.
7. Cook one side till you see bubbles appear on the top of the pancake.
8. Flip and cook the other side.
9. Repeat till batter is finished.
10. Serve immediately and enjoy.
*Note: You can add fruits such as bananas, strawberries or blueberries on the top. And you can substitute sugar by adding dates.
