Gourmet Instant Noodles

Taking instant noodles to a new platform

Preparation: 5 mins Cooking Time: 10 mins Total: 15 mins Serves: 1 person


Instant noodles with sesame seeds, chia seeds, and spring onions.

I used to love instant noodles as a child. Instant noodles, were my go to dish when no adults were home and I wanted a warm satisfying meal. It was easy to make and easy to clean up after. Over the years I have taken the simple and quick instant noodles and added items to make it a meal. Here is what I do to "gourmet" the simple instant noodles.



Ingredients:


  • 1 packet of instant noodles (I do not use the seasoning or oil that it comes with)

  • 1 small onion

  • 2 cloves of garlic

  • 1/4 inch ginger

  • 1/4 inch chili pepper (add less of more depending on taste)

  • 1 springs of green onions

  • 1 teaspoon soy sauce

  • 1 tablespoon oil (I use oils that are palm oil free)

  • 1 handful of vegetables of your choice (carrots, bak choy, mushrooms, peas, cabbage...)

  • a few pieces of tofu

  • pepper to taste

  • pinch of mushroom seasoning powder (optional)

  • 2 to 3 cups of boiling water

  • sprinkle of chia seeds

  • sprinkle of sesame seeds



Instructions:


1. Cut all the ingredients.

2. Boil 2 to 3 cups of water.

3. Add oil to a heated pot.

4. Add onion, garlic, ginger and chili pepper and let cook for 2 minutes.

5. Add vegetables and tofu and stir for 1 minute.

7. Add soy sauce and pepper and stir for another minute.

8. Add boiling water.

9. Allow to cook for 2 minutes.

9. Add instant noodles. Allow to cook for a minute.

10. Add chia seeds, sesame seeds and spring onions.

11. Stir for 30 seconds or till noodles are the way you like it.

12. Serve hot.
