Veganastic Onion Pickle

A simple yet great condiment!

So here is my back story to pickling. My love for onions took me to a whole different level when I entered a shop that sold a bag of 120 onions at only RM27.00. Without any hesitation, I bought it, but when I got home the horror struck. How were 2 people going to be able to finish 120 onions before the go bad? I love onions but at this point I knew I had found myself in an onion overload. My only option was to spend the rest of the Sunday making jars of onion pickles. Here is a simple recipe that I use. These onions can be placed on sandwiches or to add more flavour to a dish. I hope you try this easy onion pickle.
Ingredients:
Red onions
1/2 a cup apple cider vinegar
1 cup of room temperature water
2 teaspoons of salt (you can add or remove the amount depending on your taste)
10 peppercorns (you can add or remove the amount depending on your taste)
1 tablespoon of sugar
Boiling water (enough to cover the onions)
Instructions:
1. In a bowl or measuring, cup add apple cider vinegar, room temperature water, salt, peppercorns and sugar.
2. Thinly slice onions.
3. Place onions in a big bowl and pour water on top.
4. Let them sit for a minute. Strain.
5. In a pint jar add heated onions.
6. Pour the liquid into the jar. Make sure the onions are covered.
7. Let it cool down completely, cover tightly and place in the fridge.
8. The colour should change to an even reddish pink.
9. Enjoy as a wonderful condiment.
*Note: They can last for about 2 to 3 weeks in the fridge.
