Zucchini, Carrot and Mushroom Delight

Ms. Veganastic's favorite go to meal

Preparation: 10 mins Cooking Time: 10 mins Total: 20 mins Serves: 2 people


Zucchini, carrots and mushroom delight served with rice.

Today, I am sharing a meal I love to take to work. It is easy to make and taste so good when you are having a long day at work. I hope you enjoy this recipe.



Ingredients:


  • 1 small zucchini

  • 1 small carrot

  • 6 to 7 mushrooms

  • handful of spring onions

  • 2 cloves of garlic

  • 2 tablespoons soy sauce

  • a pinch of sugar

  • pepper to taste

  • drizzle of sesame oil

  • sprinkle of sesame seeds

  • tablespoon of water

  • pinch of nutritional yeast



Instructions:


1. Julienne zucchini, carrots and mushrooms.

2. Finely chop garlic.

3. Cut spring onions into 2 inch pieces.

4. Heat pan and add a tablespoon of water.

5. Add garlic, zucchini, carrots, mushrooms and spring onions.

6. Saute for 4 minutes.

7. Add soy sauce, sugar, sesame oil and nutritional yeast.

8. Saute for 4 minutes.

9. Sprinkle sesame seeds over and cook for another 2 minutes.

10. Serve and enjoy.



*Notes:

1. Additional salt may need to be added depending on the type of soy sauce you use.

2. If you do not like the taste of sesame oil, drizzle it with your favorite oil.
