Scrambled Tofu

A veganastic alternative to scrambled eggs that can be enjoyed any time of the day.

Scrambled tofu with a side of baked potatoes


Scrambled tofu is one of my go to meals either for breakfast or on a day where I just want to whip up something quick yet delicious. There are a lot of ways to make scrambled tofu. Once you have a hang of the recipe the twists that you can pull on this very simple dish becomes endless. Here is one of the ways that I like to enjoy my scrambled tofu.




Ingredients:


  • 250g traditional/ firm tofu

  • 1 small onion (optional)

  • 1 small tomato (optional)

  • 1/4 tsp of curry powder

  • salt & pepper to taste

  • sprinkle of fresh cilantro (optional)

  • 1 tbsp oil or water

Instructions:


  1. In a medium sized bowl, use a fork to crumble the tofu.

  2. Chop the onion and tomato and add it to the the crumbled tofu.

  3. Add curry powder, salt, pepper.

  4. Mix till all the tofu has a light yellow colour.

  5. Heat water or oil to the frying pan.

  6. Add the tofu mixture into the hot pan.

  7. Cook for 5 to 10 minutes, stirring occasionally.

  8. Serve hot. Enjoy!
