Scrambled Tofu

A veganastic alternative to scrambled eggs that can be enjoyed any time of the day.
Preparation: 5 mins Cooking time: 10 mins Total: 15 mins Serves: 2 people

Scrambled tofu is one of my go to meals either for breakfast or on a day where I just want to whip up something quick yet delicious. There are a lot of ways to make scrambled tofu. Once you have a hang of the recipe the twists that you can pull on this very simple dish becomes endless. Here is one of the ways that I like to enjoy my scrambled tofu.
Ingredients:
250g traditional/ firm tofu
1 small onion (optional)
1 small tomato (optional)
1/4 tsp of curry powder
salt & pepper to taste
sprinkle of fresh cilantro (optional)
1 tbsp oil or water
Instructions:
In a medium sized bowl, use a fork to crumble the tofu.
Chop the onion and tomato and add it to the the crumbled tofu.
Add curry powder, salt, pepper.
Mix till all the tofu has a light yellow colour.
Heat water or oil to the frying pan.
Add the tofu mixture into the hot pan.
Cook for 5 to 10 minutes, stirring occasionally.
Serve hot. Enjoy!
