A veganastic twist on a tomato and avocado sandwich.

Brunch at its best!

Tomato, avocado and miso toast, is a great way to start of a lazy Sunday morning. A kick of fresh healthy food that taste great to begin with can help anyone enjoy their Sunday-Funday or their Sunday-Workday. Here is how I make tomato, avocado and miso toast.




Ingredients:


  • 1 medium tomato

  • 1 avocado (sliced or mashed)

  • 1 tsp of miso paste (I use Nature Quest Natural Creamy Miso)

  • 2 slices of toasted vegan bread

  • pinch of pepper


Instructions:


  1. Toast 2 slices of bread.

  2. Slice the tomato and avocado. (You can mash the avocado like I did in the picture or keep it sliced.)

  3. Spread miso paste on the toasted slices of bread.

  4. Place the avocado and tomatoes on top of the miso paste.

  5. Sprinkle with a pinch of pepper.

  6. Enjoy!



Note: Taste the miso paste before using it as the salt may vary from brand to brand.
