Veganastic Buddha Bowl

A very humble take on the oh so famous Buddha Bowl/ Hippie Bowl...

Preparation: 10 mins Cooking time: 20 mins Total: 30 mins Serves: 2-3 people


A Budda Bowl filled with mixed vegetables and bean sprouts.

Buddha Bowls also known as Hippie Bowls, are a great way for me to enjoy the not so healthy but sometimes healthy vegan life. It is basically using whatever vegetables I have in my fridge putting it all together as quickly as you can and serving it with either white rice, brown rice, millet, quinoa, couscous, etc. There are so many variations to this simple bowl. Below is just one way that I like to enjoy mine.




Ingredients:


  • 1 medium carrot (1/2 will be used for the mixed vegetables and the other for the bean sprout dish)

  • 1 capsicum

  • 150g of mushrooms

  • 1 red/green chili

  • 100g bean sprouts

  • handful of broccoli

  • 2 cups of cooked white or brown rice (follow cooking directions that come with the packet)

  • 2 garlic cloves (you can add more if you prefer)

  • 1 medium onion

  • 1 inch piece of ginger (you can add more if you prefer)

  • 1 tbsp soy sauce

  • pinch of vegan mushroom seasoning (optional)

  • 1 tbsp vegetarian/vegan oyster sauce (optional)

  • 2 tsp sesame oil

  • pepper to taste

  • salt to taste

  • 2 tbsp of oil or water


Instructions for Mixed Vegetables:


  1. Cut the onion and chili into half moons and cut all the vegetables into thin bite size pieces.

  2. Crush ginger and garlic.

  3. In a small bowl add sesame oil, soy sauce, vegetarian/vegan oyster sauce, pepper, vegan mushroom seasoning and the crushed ginger and garlic. Mix and set aside.

  4. Heat a pan add one table spoon of oil or water.

  5. Add the onion.

  6. Once light brown add the cut vegetables.

  7. Mix for 7 minutes.

  8. Add the sauce (step 3) into the pan.

  9. Stir fry for another 7 to 10 minutes or till vegetables are cooked.

  10. Set aside.


Instructions for Bean Sprouts:


  1. Thinly slice the remaining half of the carrot.

  2. Add 1 tbsp of oil or water to a heated pan.

  3. Add carrots cook for 2 to 5 minutes.

  4. Place bean sprouts into the heated pan.

  5. Sprinkle with salt and pepper.

  6. Stir for 5 to 7 minutes.


Assembling:


  1. Place the desired amount of rice in a large bowl.

  2. Add the mixed stir fried vegetables to one side.

  3. Add the bean sprouts to the other side.

  4. Serve immediately. Enjoy!
